I'm not sure how you went about peeling and deveining (p&d in restaurant lingo) your shrimp, but the easiest way involves a nice, sharp paring knife. Insert the point of the knife into the head end, blade up. Gently push the knife toward the tail. If you do it right you'll split the shrimp's back and shell at the same time making the actual p&d part that much easier.

Of course there's every chance you knew or figured out already how to do it this way in which case you can completely disregard everything I just said.

Sam, I actually did it following the diagrams in my 1974 copy of Joy of Cooking--your way sounds about a million times better. I will try it next time and report back. Thanks!
